 What role does baking soda give you?

Normally, baking soda used to make bread or cookies

The yeast, salt, sugar, etc. inside the bread-making dough,

It interacted with the bread and met with the yeast.

It enhances the fermentation of the dough 
and serves to preserve the texture of the bread.

No Hard but Soft

It increases the likelihood of bread bubbles and fermentation 
by playing the role of yeast.

If baking soda is included, 
the bread dough will be twice as fermented as the basic dough.
